Recipe: Tetley’s Oatmeal Coconut Cookies

Springtime is finally here. Why not celebrate this fresh and colorful season over a cup of tea paired with these yummy Oatmeal Coconut Cookies? The oats and coconut in this recipe add not only taste and texture but also nutritional value. It’s time to whip out your ingredients, baking tools, and inner chef and have some fun in the kitchen!

Ingredients

  • 1 tablespoon corn syrup
  • 10 tablespoons butter
  • 1/2 cup castor (superfine) sugar
  • 3/4 cup Old Fashioned Quaker Oats
  • 1/2 cup coconut flakes
  • 1 cup flour, sifted
  • 2 level tablespoons baking soda
  • 2 tablespoons brewed Tetley Classic Black Tea

Directions

Place syrup, butter, and sugar in pan and beat gently until melted. Mix oats, coconut, and flour together and add to melted mixture. Dissolve soda in hot tea and add to mixture. Mix well and cool. Roll mixture into balls the size of a walnut. Place well apart on greased baking sheet. Bake at 325°F for 12 to 15 minutes. Cool slightly before removing from tray.
